P2V is a risky last resort method of migration. Better option is to clean install the virtual machine, patch fully, migrate roles over.

Morning just understand if i can do a P2V from phisical DELL server with windows server 2008 DELL custom image to an HP Virtual Machine Hyper-v
will run? or i have to buy another DELL server and run the converted machine in hyper-v on DELL server?

As mentioned, P2V is a risky type of migration. The best option would be to spin a new VM and migrate your services to it.
In case you need to perform a P2V (for some reason), you can use StarWind V2V Converter, which can convert your host directly to Hyper-V VM.

If it will work depends on the CPU mostly. You shouldn't have issues with migrating between Intel CPUs.
