Server 2019 Bare metal install

I have inherited a network for a small business that had just purchased a new HP server with a disk for Server 2019 Standard license. I have never built a server from scratch before and would like some pointers if anyone has any. Running a single xeon processor, 64 Gb of RAM, and 10 2Tb SSDs for storage.
When I first boot, it shows 10 drives but when I enter the storage setup it only shows 8 drives available. I would like to use RAID 10 on 8 drives and then raid 1 on the remaining 2 drives for the OS but do not see how to do that.
Do I just make the array with those available 8 and then try to install the OS? Or am I getting ahead of myself?

    Does this server have hardware raid? If so you'll boot into controller bios to build the two raid configurations. Consult the server documentation for this. Once the raids are configured then boot the install media and the two configured raids will be presented for installation.
