I want to know if it is possible for me to deploy node pools to different regions using the same control plane. What implications would it have on my architecture, and is it advisable to do this?

This feature seems not to be available at the moment. There is an active discussion about this feature which can be followed on the AKS' GitHub repo here - Support for multi-region clusters
