In this case is only possible by GPO or registry key? Both settings can we specify more than one server? For example, I have a 2019 server and a 2012 server can I specify both in the same GPO or registry key? Or does this setting work for registry key only?

Yes you can add many servers through GPO or registry key. You have just to add a comma between servers
