    Hi @Fraz Ahmad ,
    Thanks for visiting our forum.

Can I have security control on my office 365 outlook. can i turn off virus scanner on uploading attachment, and use my domain of outlook for phishing awareness containing malicious docs, and red teaming.

Does the virus scanner you mentioned here mean the Office 365 built-in Security Protections or something else? Since I mainly focus on general issues about Outlook desktop client, I might know little about these Security control. I searched a lot abut your issue and found some information related to Office 365 Security.

As I know, In Office 365 security, there are three main security services (or products) tied to your subscription type:Exchange Online Protection (EOP); Advanced Threat Protection, Plan 1 (ATP P1) and Advanced Threat Protection, Plan 2 (ATP P2). Safe Attachments protection for email messages is controlled by Safe Attachments policies. There is no default Safe Attachments policy, so to get the protection of Safe Attachments, you need to create one or more Safe Attachments policies. For instructions, see Set up Safe Attachments policies in ATP.

And usually we could configure these Safe Attachments policies or Anti-malware protection in EOP besed on our own need. For more information, please check these article:
    Anti-malware protection in EOP

    Hope this can be helpful.
