Hello,
You can enable SharedPC mode by using Intune, so that the user is restricted from using the local storage.
You can create a custom OMA-URI policy in Intune console as below, or you can view more settings for the SharedPC mode by referring to the following article. By default, the local storage is restricted after you enabled shared PC mode. Also, you can allow to use the local storage by changing the setting.

After the policy is applied, the user can't view the C drive any more. Please refer to the following screenshot.

@Narciso Valdes Manriquez , Based on my research, I did not find the direct setting to show My Documents and Desktop. But I have a thought , maybe we can try:
    Suggestion
Use script to change the desktop icon setting and add user's files on the user Desktop. Based on my test the registry on my Windows 10 is
    HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\HideDesktopIcons\NewStartPanel
{59031a47-3f72-44a7-89c5-5595fe6b30ee} When value is 0, the user folder will display on the desktop. like the administrator foler in the following picture.

For the script, research and find one for Windows 7. You can refer to it:

    Hope it can help
