You can create a Device Configuration Profile for macOS and use Settings Catalog Policies which are available under the Restrictions category.

    • From Intune Admin center > Devices > macOS > Device configuration > Settings catalog > Restrictions.

Some of the settings you can use:

    • Enforced Software Update Delay
    • Enforced Software Update Major OS Deferred Install Delay
    • Enforced Software Update Non OS Deferred Install Delay

For other settings and delay options, you can refer to the link: https://video2.skills-academy.com/en-us/mem/intune/protect/software-updates-macos#configure-more-macos-software-update-settings-using-the-settings-catalog.

Hope this is helpful to you and solves your query.
