100+ DEP Enrolled iPads, want to set it so that any pictures and videos auto save to onedrive and not the locally

Regrettably, as far as I know, Intune does not currently support this feature, despite the inclusion of the "Camera Uploads" option in the OneDrive client. I encountered a similar issue before, which was resolved by sending out a manual set-up guide via email to all employees.
