As per our documentation - https://video2.skills-academy.com/en-us/powershell/module/azureinformationprotection/Set-AIPScannerConfiguration?view=azureipps#-reportlevel:~:text=The%20folder%20stores%20up%20to%2060%20reports%20for%20each%20scanning%20cycle%20and%20all%20but%20the%20latest%20report%20is%20compressed%20to%20help%20minimize%20the%20required%20disk%20space. - The folder (%localappdata%\Microsoft\MSIP\Scanner\Reports) stores up to 60 reports for each scanning cycle and all but the latest report is compressed to help minimize the required disk space and old files will be deleted.
If you want to retain old files, in that case you need to have a backup solution in place.
