As a workaround, how about if you create firewall rule with Intune to block communication to quickassist exe?
Block New QuickAssist location Windows 11
Good afternoon,
I am looking for info/direction on how to block Quick Assist from being opened on Windows 11. I was able to block it on Windows 10, but the same policy/scripting is not working on Windows 11.
I was able to remove Quick Assist from Windows 11 devices via Intune, but users can still download and run it from the Microsoft Store. We need to block it entirely.
Thank you!

If yes, try to deploy it via Intune.
