In Azure document intelligence can you actually use the General Documents profile which is already created?

Is it possible to use the General Documents profile which is a try out in the Document Intelligence Studio. This is exactly what we want to do as we have very random letters coming in and we want to pick up 2 pieces of information i.e. Forename and Surname which this profile seems quite successful at.
