According to my test, when I click “Other Email Address…” and type in a shared mailbox address, it will be saved in the “From” drop-down list.
It is recommended that you delete the old profile and create a new to see if it can be fixed: Go to Control Panel > Mail > Show Profiles, delete the old profile, and create a new, then re-connect your account.
If above doesn't help, as a workaround you can try adding the shared mailbox manually. Open Outlook, go to File > Add Account, enter the name and email address but leave the passwords blank
