MDT Boot.Wim Version wrong

I am using Deployment Workbench 6.3.8456.100 and Windows Deployment Services 6.3.9600.16384

I have updated my ADK to the current version and loaded the WinPE add-on so as to be able to capture Win 10 20H2 images.
I've applied the UEFI patch and have regenerated my Boot.wims.

However, the Boot images are always OS 10.0.17763 (Win 10 1809).

What am I missing?
