I am afraid to say that you can't upgrade from V1 to V2 as per the Microsoft documentation.

Only option is You have to create another Virtual machine with V2 and Please make a complete backup of your existing V1 VM and Restore the backup data after creating a new VM.
But there is a recent update related to trusted launch, you can check this and see if this works out in your case.
