I know our printers follow the users with FSLogix but it doesn't do anything with the printer per say.
We have an odd issue that our printers default back to adobe pdf randomly throughout the day and sometimes on login.
Has anyone else experienced this? I do not believe its a FSLogix issue but figured I would ask just incase.

We already tried a bunch of stuff that was on that was just making sure it wasnt related to anything FSLogix

Do you mind sharing how you resolved this? We appear to be having the same issue in our environment.
We applied the following registry key to our session hosts to help the issue
HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows NT\CurrentVersion\Print\Providers\Client Side Rendering Print Provider
RemovePrintersAtLogoff - reg_DWORD - Value set = 0

Please take a look at this thread :RDS - W2019 - Default Printer lost on session disconnect or logout/login.
He has shown a very cleared solution.
