We are looking at using Azure Computer Vision to process documents that include sensitive/personal information. A few years ago, Computer Vision was not suitable for this due to Azure retaining information:
https://social.msdn.microsoft.com/Forums/en-US/d049fdef-8bd8-4edf-8622-7c24a371f561/cognitive-services-privacy-policy?forum=MachineLearning

However, there have been changes to the service terms since:
https://azure.microsoft.com/en-in/blog/microsoft-updates-cognitive-services-terms/

To re-evaluate using Azure Computer Vision with sensitive/personal information. Does Azure store or use any of the documents we pass into it (other than to parse and reply to us)? Does Azure store or use the resulting reply (other than to send it to us)?

Thanks!

    Check this page:
    https://azure.microsoft.com/en-us/support/legal/cognitive-services-compliance-and-privacy/

For Computer vision (and other cognitive services), it says:

"The services listed above give you control over the storage and deletion of any customer data that they store as part of providing the services to you. For services that do not store customer data, the customer data is automatically deleted after processing"

The only data probably stored would be the sample documents you would use for training the model. But it won't be shared to others and you may delete it once its not needed - or better to train using dummy data.
