I'm looking to migrate our companies users from Exchange Online (plan 1) to Microsoft 365 Business Standard Exchange.
They already are using the Microsoft 365 Business Standard accounts.
So I'm wondering, does anything need to be done to migrate the Exchange Online plan, or will it just work if I terminate the Exchange Online plan?

I would like to confirm, are you performing the operation just remove the license then click save or you have replaced/added the new license?
According to the introduction, Exchange online plan1 doesn't have in-place hold feature:

Just make sure to replace the license in a single operation, that is remove the Exchange Online license and assign the Business one before you press the confirmation button. Otherwise you risk (temporary) disconnecting the mailbox.
When I cancel the Exchange Online license, will it automatically use the Microsoft 365 Business Standard Exchange? Or do I have to activate that somewhere? All the users are already using Microsoft 365 Business Standard for all the other 365 apps.
I just unassigned myself from the Exchange Online. I'll use myself as a guinea pig.
Don't unassign the license, this is what I warned above. It will not automatically assign any other license, and you will end up disconnecting the mailbox. Instead, replace the license, by removing the Exchange license and adding the Business one in a single operation.
How is unassigning different from removing the Exchange license?
Are you saying I should do that from the “Active Users” list?

Yeah, I got this after removing the license in my Active User Account tab:

The easiest way to do it is to go to the Users > Active users page, select all the users in question, select Manage product licenses > Replace. Then, uncheck the existing license and check the Business one, before hitting the Save changed button.
