Azure Stack HCI Test Build - Can no longer Progress further then "Select management adapters"

Howdy, building a 2-node Azure Stack HCI test cluster using Nested virtualisation (Hyper-V - same physical host) using Windows Admin Center (v2009).

Initially I was able select a management adapter for each node & progress up to the clustering section, but after having credSSP issues (which have since been resolved), I had to restart the Deploy an Azure Stack HCI cluster process, now when I'm up to the Select management adapters part, both NIC's are greyed out & I can no longer progress further. I have deleted & recreated the vNICS multiple times, set different IP's, nodes restarted etc without any success. What isn't helping is the documentation for Azure Stack HCI is absolute garage
